With apologies to my mother on the post title.
Once upon a time, The Hubs decided he hated barbecue chipped ham sandwiches. Namely, he hated the Isley’s barbecue sauce. And let me tell you, around here, that’s sacrilegious.
So, my mother–a fan of chipped ham–dug into the depths of her recipe vault and pulled out an old family favorite. It’s chipped chopped ham. It’s barbecue sauce ( not Isley’s, but “real” barbecue sauce). It’s mayo.
The Hubs fell in love with them. He declared them the best ham sandwiches he’d ever eaten.
My mother says she remembers my Grandpa making these sandwiches in the early 60s. My aunt says in her area, they call them Garbage Sandwiches. Call them whatever you want. I simply call them Those Hot Ham Sandwiches. The Hubs requests them every week.
Well, maybe not every week.
…okay, yeah, every week.

Those Ham Sandwiches
What You’ll Need
1.5 to 2 pounds chipped ham
2 or 3 hard boiled eggs, chopped
1 small onion, chopped fine
3/4 cup velveeta, cubed
1/2 cup mayo
1/4 barbecue sauce
The Process
Mix until combined. Heat until hot and velveeta is melted. Serve on buns or eat right from the pan.
Simple! Delicious!

What is chipped ham?
It’s extremely thin sliced deli ham. We’ve made it with thicker slices, but I personally think the thinner the slice, the better.
Mmm, that looks good. I think I might have to try something like this…
